Clarity of Low Wines vs High Wines

Low Wines:

  • First Distillation: The initial product from distilling the wash/mash.
  • Alcohol Content: Lower, around 20-30% ABV.
  • Clarity: Often cloudy, with impurities still present.

High Wines:

  • Second Distillation: Produced by further distilling low wines.
  • Alcohol Content: Higher, typically 60-70% ABV.
  • Clarity: Much clearer and purer, with most impurities removed.

In summary, low wines are the less refined, lower-alcohol product of the first distillation, while high wines are the clearer, higher-alcohol product of the second distillation, approaching the final spirit quality.
